  • 1 tbsp fresh parsley , finely chopped (optional)

  • CORN BREAD TOPPING

  • 1/2 cup melted butter

  • 3 eggs

  • 1 cup milk

  • 1/2 cup polenta / cornmeal (Note 3)

  • 1 1/2 cups self raising flour (or 3 tsp baking powder plus 1 1/4 cups + 3 tbsp of plain flour)

  • 1/2 cup sugar

  • 1/4 tsp salt

  • 1 cup of canned creamed corn

Preheat your oven to 180C/350F.

Take 1 cup of your delectable Shredded Beef Chili Con Carne and distribute it evenly among either four individual pie dishes or a single larger pie dish.

In a bowl, combine the dry components of the Corn Bread Topping, giving them a quick stir to achieve harmonization.

Proceed to introduce the wet ingredients for the Corn Bread Topping and blend until a cohesive mixture forms, devoid of any lumps.

Should you be assembling a single large pie, anticipate a baking time closer to 35 minutes. To ascertain its readiness, insert a skewer into the center of the corn bread – a clean skewer signifies its completion, while batter clinging to the skewer warrants a return to the oven.

Notes

To manage this, opt for a flatter dish rather than a deep one when making the pie. For instance, I utilized rectangular individual pie dishes measuring 15cm x 12cm (6" x 5") and with a depth of 4 cm / 1.4". It's highly probable that you'll have some batter leftover – roughly about 1/4 to 1/3 of it. Precision in achieving the exact required amount can be challenging, particularly due to variations in pie dish shapes and sizes. If there's an excess of batter, spoon it into greased ramekins or muffin tin trays and bake alongside the pie. Standard-sized muffin portions of corn bread typically necessitate about 15 to 20 minutes of baking time. A point of clarification: Polenta isn't technically an ingredient but rather a porridge-like dish crafted from cornmeal. It's the Italian counterpart to mashed potatoes! However, in Australia, fine yellow cornmeal is marketed as "polenta," which can lead to confusion. In most other regions, it's sold as cornmeal. The provided nutrition details account for the fact that approximately 1/4 of the corn bread batter is left unused and not incorporated into the pie.
