  • 200g / 3/4 cup unsalted butter, softened

  • 2 1/2 cups soft icing sugar / powdered sugar , sifted (Note 1)

  • 1/2 cup cocoa powder , unsweetened, preferably Dutch Processed, sifted(Note 3)

  • 1/4 cup milk (any)

  • 1 tsp vanilla extract (optional)

Instructions

Begin by putting the butter in the stand mixer bowl equipped with the paddle attachment. Beat the butter for 3 minutes at speed 7 until it takes on a pale appearance.

Next, incorporate half of the icing sugar and cocoa powder into the mixer. Beat the mixture for 3 minutes, starting at a slow speed and gradually increasing to speed 7.

Then, add the remaining portion of icing sugar and cocoa powder to the bowl. Beat the ingredients together for an additional 3 minutes.

If you choose to use milk and vanilla, add them to the mixture and beat again for 1 minute at speed 7.

Finally, you can either spread the frosting onto cakes or cupcakes or spoon it into a frosting bag for piping delightful decorations.

Notes

In Australia, ensure you purchase packets labeled as Soft icing sugar, not Pure Icing sugar, which is best suited for royal icing that sets hard for writing on cakes. The quantity provided is sufficient for swirling frosting on 12 cupcakes (refer to the photo in the post) or generously frosting a 22cm / 9" cake (covering top, sides, and filling) with an appropriate amount. If you desire more frosting for a cake, such as the one depicted in the Chocolate Cake recipe (2-layer 22cm/9" cake), increase the recipe by 50%. To do this, use the recipe scaler (hover / click on servings and slide) and continue increasing until the amount of icing sugar reaches 450g / 3.75 cups. Opt for Dutch Processed cocoa powder as it offers a more intense chocolate flavor compared to regular cocoa powder, enhancing the overall taste of the buttercream. For an alternative approach using chocolate instead of cocoa powder, take 75g / 3 oz of 70%+ cocoa dark chocolate. Melt and let it cool, then whisk it in at the end to create a delightful chocolate variation of the frosting.
