While many Americans contemplate two significant post-Thanksgiving considerations—how to shed those excess calories and what to do with leftover Thanksgiving dishes—the rest of us around the world are already directing our focus towards another crucial matter: What delectable contribution to bring to gatherings. The answer is simple: Outstanding food.

Quality food.

Food that satisfies a crowd.

Enter Chorizo Bites in a Sweet & Spicy Sauce. Chorizo, in my opinion, is an underestimated and often overlooked secret ingredient. While sausages have had their moment, chorizo boasts enhanced flavor and a richer hue. A mere placement on a baking tray alongside veggies and a quick bake results in an almost self-saucing instant dinner. Whether thrown into frittatas, salads, or soups, chorizo operates as the “Other Bacon,” elevating everything it touches.

Though chorizo might not be your initial consideration for party fare, I encourage you to give it priority. A small amount goes a long way, requiring minimal preparation. Even if you simply slice and cook it—akin to my approach when crafting my Easy Spanish Tapas spread—it remains an absolute crowd-pleaser.

In this rendition, I opted to elevate the experience a notch. I wanted to ensure that you become the star of any gathering where you present this dish. Hence, I designed a sauce to accompany the chorizo. This sauce embodies the perfect blend of sweetness and spiciness, so divine that your guests will continue savoring it with bread long after the chorizo has vanished. This recipe is a recent addition to my repertoire of make-ahead party foods. While dips hold a proven track record, I yearn for something distinctive. A crucial factor for me in selecting party food, whether for my own hosting or when I’m a guest, revolves around its make-ahead potential, reheating qualities, and ease of transportation.

This creation checks all those boxes. While it shines when served warm, it remains enticing even at room temperature. A swift microwave reheating for a minute or two is sufficient, and it necessitates no intricate assembly—simply pour it into a dish. It’s possible to prepare it a couple of days ahead, with quick preparation and easy transportation thanks to a plastic container.

  • 3/4 cup pineapple juice

  • 2 tsp ketchup (or Australia/UK tomato sauce)

  • 2 tsp+ hot sauce of choice (Franks etc, adj to taste)

  • 2 tbsp brown sugar , packed

  • 1 garlic clove , finely chopped or minced

  • 1/4 tsp salt

  • Pepper

  • THICKENER

  • 1 1/2 tsp cornflour / cornstarch

  • 1 tbsp water or pineapple juice

  • CHORIZO

  • 4 (~600 g / 1.2 lb) chorizo (Note 1)

  • 2 tsp oil

  • Parsley , for garnish (optional)

  • Toothpicks for serving

Instructions

Slice the Chorizo into segments about 8mm / 1/3" thick, with the cuts slightly angled.

Combine the ingredients for the sauce in a bowl.

Create the thickening mixture in a small bowl.

In a skillet, heat oil over medium-high heat. Add the chorizo slices and cook until they achieve a golden brown hue on both sides, taking approximately 3 minutes.

Introduce the sauce to the skillet, allowing it to simmer for about 3 minutes.

Swiftly incorporate the thickening mixture and mix well. Allow the mixture to simmer for a brief span, anywhere from 45 seconds to 1 minute, until it thickens—consult the video located below the recipe for visual guidance.

Transfer the prepared concoction to a serving bowl. Should you desire, embellish with parsley for an added touch, and present with toothpicks for easy enjoyment.

Notes

It's crucial to opt for UNCOOKED Chorizo, which necessitates cooking prior to consumption, as opposed to cured chorizo that resembles salami and can be enjoyed without cooking. Raw chorizo can be conveniently procured from the fresh counter at Woolworths and Coles (in Australia). For advance preparation, transfer the dish into a container and let it cool. Once cooled, cover and place it in the refrigerator until needed. When ready to serve, reheat in the microwave for a brief period—1 to 2 minutes should suffice.
