How to cook Garlic Bread on the BBQ


Creating garlic bread on the barbecue might seem like a straightforward endeavor. Just blend softened butter with garlic, generously spread it on bread, and place it on the grill, right?

However, a significant issue arises when all that butter begins to liquefy, resulting in flare-ups that lead to charred garlic bread. Not to mention, a considerable portion of that flavorful garlic butter is lost in the process.

But fear not, as I have a valuable insider tip to share: opt for garlic-infused butter that’s been melted instead of using softened butter.

Here’s the key technique: Begin by spooning half of the garlic-infused butter onto the bread, allowing it to permeate. Apply enough to be absorbed but not so much that it drips out upon hitting the grill’s surface.

Next, place the bread on the grill with the cut side facing down to achieve a crispy texture. Once appropriately crisp, flip the bread and proceed to brush or spoon the remaining garlic-infused butter over the top.

After the underside reaches its desired level of crispiness, it’s time to slice and serve! This approach ensures that you achieve the perfect balance of flavor, texture, and presentation for your grilled garlic bread.

  • 1 bread loaf , fairly flat (rather than a tall loaf, Note 1)

  • 125 g / 1 stick salted butter (or unsalted + 3/4 tsp salt)

  • 3 garlic cloves , very finely chopped (do not use crusher or jar, Note 2)

  • 1 tbsp finely chopped parsley , optional

Instructions

Preheat the barbecue to medium-high heat.

In a small saucepan, melt the butter over medium-high heat. Introduce the garlic and salt, stirring until the garlic takes on a subtle golden hue and the salt dissolves.

Swiftly remove the saucepan from the heat, allowing the garlic to infuse into the butter for a few minutes.

Divide the bread lengthwise or utilize thick individual slices.

Apply a slightly more than half of the butter onto the exposed interior of the bread, being mindful to avoid the scattered garlic pieces. Lightly brush some butter on the opposite side.

Position the bread with the cut side facing down on the grill and cook for approximately 3 to 5 minutes, or until enticingly crispy edges form. Then, flip the bread.

Clear away any burnt fragments of garlic, then generously coat the bread with the remaining garlic-infused butter. While the garlic bits are mainly employed for infusing flavor, feel free to include them for a delightful texture!

Regarding the bread's dimensions, aim for approximately 35cm / 14" in length and 4 - 5cm / 1.5 - 2" in thickness. Opting for a bread that's not excessively lofty or thick is key; this way, you'll achieve the perfect harmony between butter and bread. If all you have access to are traditionally tall bread loaves, simply cut them into thick slices to craft individual portions of delectable garlic bread! When it comes to garlic, refrain from utilizing a garlic crusher or pre-packaged garlic from a jar. These forms of garlic yield minuscule and damp particles that are prone to splattering and rapid scorching within the butter.
