I’ve made cauliflower soup many times, but this is the first time I’ve made broccoli soup. It’s really like the consistency of cauliflower soup, really creamy (but not a drop of cream!) but so green and I feel like it’s good for my insides – packed with nutrients. We are here!

If you use a hand blender, it will be on the table in 15 minutes. Croutons are not an option.

Equipment

Ingredients

  • 1 large head of broccoli

  • 1 potato , peeled and roughly chopped into cubes about 1.5cm / 1/2" cubes

  • 1 white or brown onion , roughly diced

  • 2 cloves garlic

  • 2 cups / 500 ml vegetable stock / broth

  • 1 cup / 250 ml milk (low fat, cow or soy)

  • 1/2 cup / 125 ml water

  • Salt and pepper

Instructions

Cut the broccoli into florets about half the size of a golf ball. Coarsely chop most stems, with the exception of the main stem, into thumb-sized pieces. Discard the main stem or set aside for another use.

Place all ingredients except milk, salt and pepper in a pot, cover with a lid, bring to a boil, then reduce heat to medium and simmer quickly for 8-10 minutes.

Remove the lid, add milk, bring to a boil again, remove from heat and puree with a hand blender.

Cooking on the stove over medium to high heat for too long will thicken the soup.

Season with salt and pepper and serve with croutons if desired.

Croutons

Dice the stale bread, lightly brush with olive oil, spread out on a baking sheet and he bake for 3-5 minutes. Sprinkle with salt and add to the soup.
