Whenever I visit the Asian grocery store, I always make sure to stock up on certain pantry staples, and wonton wrappers are a constant presence on my shopping list. They freeze exceptionally well and serve a versatile role beyond their traditional use in wontons. I’ve employed them for crafting mini triangles, faux mini cannoli, and most frequently, for creating petite cups to house both sweet and savory fillings.

Previously, I shared my recipe for Caesar Salad Wonton Cups, demonstrating how wonton cups can be used for savory indulgences. Now, these mini Apple Pies showcase their sweet side.

If you prefer, you can opt for frozen pastry in lieu of wonton wrappers. The key advantage here is that you save time by not having to cut out pastry rounds since the wonton wrappers are an ideal size for fashioning cups in muffin trays. After just 10 to 15 minutes in the oven, they emerge golden brown and delightfully crispy (thanks to a quick spritz of oil). During this time, you can prepare the pie filling, making it possible to create these delightful treats in a little over 15 minutes, from start to finish. (Pro tip: If you want to speed things up further, you can use canned Apple Pie filling.) Another fantastic aspect of these mini treats is their readiness for advance preparation. You can store the wonton cups in an airtight container for a couple of days, while the Apple Pie Filling and cream can be prepared the day before. To assemble, simply warm the Apple Pie Filling in the microwave until it reaches a warm (not hot) temperature, then scoop it into the cups and garnish with cream.

  • 18 wonton wrappers

  • Oil spray

  • APPLE PIE FILLING

  • 5 cups small diced , peeled Granny Smith apples (around 1.5 lb / 800g, 5 medium size apples)

  • 2 tbs butter

  • 1/3 to 1/2 cup brown sugar (adjust to taste, depends on tartness of apples)

  • 2 tsp cinnamon

  • 1/4 cup water

  • Pinch of salt

  • CREAM

  • 3/4 cup whipping cream (unwhipped)

  • 2 tbsp powdered sugar (icing sugar), sifted

  • Few drops vanilla essence

Preheat your oven to 390°F (200°C).

Gently shape the wonton wrappers into standard-sized muffin tins or cupcake trays. Give them a light spritz of oil (this aids in achieving an even, golden bake), and then bake them for approximately 10 to 15 minutes, or until they turn crispy and golden. Take them out of the oven and allow them to cool in the muffin tins.

Meanwhile, in a large saucepan set over high heat, combine the ingredients for the Apple Pie Filling. Allow it to come to a simmer, and then reduce the heat to medium. Let it simmer, with occasional stirring, until the apples have softened, which typically takes about 8 minutes. You should aim for no residual liquid; just a luscious, syrupy coating on the apples. Adjust the sweetness to your liking, as the sugar quantity may vary depending on the apples' tartness or sweetness. Remove the saucepan from the heat and let it cool until it reaches a warm temperature.

While this is happening, whip the cream and powdered sugar (icing sugar) together until soft peaks form.

To serve, spoon the still-warm Apple Pie Filling into the wonton cups and crown it with a dollop of the whipped cream. Serve promptly.

Notes

If you prefer, you have the option to utilize canned Apple Pie Filling in lieu of fresh apples. In this case, you'll only need to briefly simmer the filling to meld the flavors and gently warm it since the apples are already tender and do not require additional cooking for softening. For advance preparation: Allow the wonton cups to cool, then safeguard them in an airtight container for up to 2 days. Whip the cream, cover it, and store it in the refrigerator overnight until needed. Cool the Apple Pie Filling, cover it, and refrigerate it for up to overnight. If any excess liquid accumulates on the surface, simply remove it, then reheat the filling in the microwave until it reaches a warm temperature.
