What a wonderful breakfast treat – no mess, no cutlery required! Plus, it’s incredibly quick to prepare, taking just 15 minutes to make two servings in a single pan. Who doesn’t love the idea of breakfast in bed? Yet, in reality, it can be quite awkward trying to balance a tray on your lap and eat with cutlery. Toast, pastries, or muffins often lead to crumb disasters, with plates held up close to the chin to prevent any spillage.

But fear not, the Mini French Toast is the perfect solution. Not only is it crumb-free, but it’s also small enough to be enjoyed with your hands. This delightful and practical breakfast will make your Sunday mornings a joy. Personally, I have a soft spot for finger food, probably because it allows me to multitask – nibbling with one hand while holding a glass of wine with the other, or snacking while typing away on the keyboard, and even indulging in chips ‘n dip while animatedly chatting with friends.

And the best part? Despite the mouthwatering appearance of this batch, it’s remarkably quick to make. I kid you not! A leisurely 15 minutes is all you need to whip up the entire delicious treat in a single frying pan.

With Valentine’s Day around the corner, why not surprise your sweetheart with a leisurely breakfast in bed featuring these delightful Mini French Toasts? It’s the perfect way to celebrate the occasion!

Equipment

Ingredients

  • 1 cup sliced strawberries

  • 2 tsp sugar (white)

  • 2 eggs

  • 2 tbsp milk (full or low fat)

  • Pinch of salt

  • 1 - 2 tbsp unsalted butter (more = yummier)

  • 10 slices of baguette (french stick), around 2 1/5" / 3cm thick

  • TO SERVE

  • Maple syrup (not optional!)

  • Confectioners sugar (icing sugar), for dusting (optional)

  • Extra strawberries (optional)

Instructions

1
Start by combining the sugar and strawberries in a bowl, allowing them to macerate and form a delightful syrup through the process of sweating.
2
In a separate shallow bowl, lightly whisk the eggs, milk, and a pinch of salt together.
3
Next, heat some butter in a large fry pan over medium-high heat.
4
Now, dip each side of the bread slices into the egg mixture, spending about 3 seconds on each side. Once coated, place the bread in the pan and fry each side for approximately 2 1/2 minutes, or until they turn a beautiful golden brown.
5
Once cooked, remove the French toast from the pan and serve it up! Top it with the strawberries and use the syrup created during maceration. For an added touch of sweetness, drizzle with maple syrup and, if desired, sprinkle with confectioners sugar (icing sugar).
6
This delightful treat is now ready to be savored and enjoyed!
