  • 3 tablespoons olive oil

  • 1 onion, chopped

  • 4 cups chicken broth

  • 15 oz tomatoes, whole or crushed

  • 15 ounces (1 1/2 cups) northern cannellini beans, not drained

  • 1 tablespoon red wine vinegar

  • 1 heaping cup, about 4 ounces ditalini pasta, uncooked or other small pasta

  • Top with fresh parsley and parmesan cheese if desired.
