While red velvet is immensely popular in the US, it hasn’t quite taken over Australia yet. Cupcake shops in Australia often have red velvet as a staple, but they don’t dominate as the most sought-after treat. However, the narrator’s love for red velvet began when they tried the irresistible red velvet cupcakes from Magnolia Bakery during their visit to NYC. The experience was so exceptional that they willingly queued up despite their usual aversion to waiting for food.

At a recent family dinner, the narrator brought these cookies and sparked curiosity about the allure of red velvet, particularly from their food-savvy brother. Explaining why red velvet is so delightful is a bit challenging, as it doesn’t solely rely on a chocolate flavor; the appeal lies in the overall experience. The visually striking red hue, the subtly chocolatey taste, and the crowning glory of cream cheese frosting all come together to create a uniquely delightful treat.

Ultimately, the narrator asserts that these cookies are, without a doubt, awesome! Their enjoyment of these Red Velvet Cookies is undeniable and guaranteed to delight anyone who gives them a try. Pinky swear!

Instructions

1

COOKIES

Preheat your oven to 180C/350F.
2
Line two cookie sheets with baking (parchment) paper, and to secure it in place, lightly streak the tray with a bit of butter.
3
In a mixing bowl or using a handheld beater, cream the butter, vanilla extract, and sugar until the mixture becomes light and fluffy. This typically takes around 3 minutes on high speed.
4
Add the eggs, sour cream, cocoa powder, and red food color to the mixture and blend until well combined.
5
Next, incorporate the flour and baking powder into the mixture, blending until just combined.
6
Using heaped tablespoons of batter, drop portions onto the prepared baking tray, leaving about 1 inch / 2.5cm of space between each cookie and the edges of the tray.
7
Bake the cookies for 8 to 10 minutes until the top springs back when touched.
8
Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack.
9
Once cooled, top the cookies with cream cheese frosting and red sprinkles if desired.
10

CREAM CHEESE FROSTING

In a separate bowl, beat the frosting ingredients together until the mixture becomes fluffy and smooth. This typically takes around 5 minutes on high speed.

Notes

To keep these cookies fresh and safe, given the cream cheese and butter in the frosting, store them in an airtight container in the refrigerator. However, before indulging in their delightful goodness, be sure to bring them back to room temperature for optimal enjoyment!
