It’s like a fusion of Satay Chicken and a noodle stir-fry, or perhaps a cross between a noodle stir-fry and a salad. Actually, it’s more like the lovechild of Satay Chicken and a salad.

It’s a culinary hybrid, and I can’t emphasize enough just how amazing it is – it deserves a big, bold INCREDIBLE with a capital I.

Now, let me assure you, with my Japanese heritage, I’m quite particular about my faux-Asian cuisine. I won’t pretend that this dish is an authentic representation of Southeast Asian food in any way. However, its delectable taste is all that truly matters.

This recipe is part of my mission to incorporate more vegetables into RecipeTin Eats in 2016. I initially started with a simple Satay Chicken Salad minus the noodles, which was enjoyable but not quite hitting the mark.

I had a hunch that adding noodles would elevate it to something truly magical.

The creamy peanut dressing is specifically designed to complement the noodles perfectly. As for the chicken, it’s not just ordinary cooked chicken; it’s prepared using a basic Satay Chicken recipe, so it packs a flavorful punch all on its own.

To be honest, I could happily devour a bowl of just the chicken and the peanut dressing, without the veggies. Veggies – check. Noodles – check. Flavorful Satay Chicken – double check. Creamy peanut Satay sauce – triple check.

Resist the temptation to guzzle down all the dressing or devour all the chicken drenched in it; that’s the real challenge. Once that chicken is cooked to perfection, resisting that dip into the dressing for a taste will require some serious willpower!
