Equipment

Ingredients

  • CHEESECAKE MOUSSE

  • 225 g /8 oz cream cheese , softened

  • 1⁄2 cup confectioners’ sugar (icing sugar)

  • 1 1⁄2 tsp vanilla extract

  • 1⁄2 tsp lemon zest

  • 3⁄4 cup heavy whipping cream , whipped

  • GRAHAM CRACKER CRUMBLE

  • 1 1⁄2 cups lightly crushed graham crackers

  • 3 tbsp packed brown sugar

  • 4 tbsp salted butter , melted

  • STRAWBERRY CARAMEL

  • 250 g / 9 oz punnet of strawberries

  • 1 cup caster sugar

  • 1⁄4 cup cold water

Instructions

1

CHEESECAKE MOUSSE

Whisk together the cream cheese, confectioners' sugar, vanilla, and lemon zest until the mixture becomes light and fluffy.
2
Gently fold in the whipped cream, then cover and refrigerate for a minimum of 2 hours, or until needed (it can be stored for up to 3 days).
3

STRAWBERRY CARAMEL

Blend half of the strawberries until smooth.
4
Quarter the remaining berries (or halve if they are small).
5
In a saucepan, combine sugar and water, stirring over low heat until the sugar dissolves. Increase the heat to medium-high and cook for 4 to 5 minutes without stirring until a golden caramel forms.
6
Remove from heat, carefully stir in the pureed strawberries (be cautious of splattering), then return to low heat and stir until the mixture becomes smooth.
7
Allow it to cool, then incorporate the reserved quartered berries. Refrigerate until needed.
8

GRAHAM CRACKER CRUMBLE

Mix together the crushed graham crackers, brown sugar, and butter in a bowl until well combined.
9

TO ASSEMBLE

In a transparent glass, layer the bottom with a portion of the graham cracker crumble.
10
Spoon the cheesecake mousse on top and finish with the strawberry caramel.
