  • 1 medium onion, chopped

  • 1 inch piece ginger, crushed

  • 4-5 garlic cloves, crushed

  • 1-2 green chili peppers, chopped

  • 1/2 tsp red chilli powder

  • 1/2 tsp turmeric powder

  • 1 tsp salt

  • 1 tsp coriander powder

  • 1 tsp cumin powder

  • 1/2 tsp cumin seeds

  • 1 tbsp plain whole milk yogurt

  • 2 medium sized (~1 lb) Chinese or any bitter melons

  • 2 tsp salt for prepping the bitter melon

  • vegetable oil for frying

  • juice of a quarter of a lemon, optional

  • coriander leaves, chopped (for garnish)


First, sprinkle more than one teaspoons of salt into a bowl with the sour melon, blend and set apart. This enables take out some of the bitter flavors.
