Chinese Vs South Asian Bitter Melon

The first step of this recipe is to salt the bitter melon to help dispose of a number of the sour flavors.

The chinese style of bitter melon is mellower in terms of its pungency, and that’s what I used on this recipe. After tasting a bite of this dish, my husband commented how it’s no longer as sour as he predicted. whilst penning this, I realized that it’s likely because I used the chinese sour melon and no longer the Indian one, which he is aware of because he grew up inside the motherland! So, if the use of chinese sour melon, shorten or pass the salting part if you are like my husband and have a keenness for that sharp taste.

some other manner to take away any bitterness is to reduce and freeze the bitter melons in advance. No want to salt them!

in case you’re the use of the Indian sour melon, you can peel some of the tough skin of the bitter melon before salting it.
