Health doesn’t have to be bland! These Frittata Egg Muffins are packed with all sorts of goodies and are super healthy!

Ready-to-eat breakfast muffins with spinach, cherry tomatoes, bell peppers/bell peppers and feta pops to fill you up. the feeling lasts. Egg muffins can be kept in the refrigerator for 4 days and in the freezer for 3 months. Low carb, low fat, high protein and only 110 calories!

Frittata Egg Muffins

If you want to start your morning with something healthy yet wonderfully delicious (thanks Mr Feta, you’re my best friend for adding minimal calorie bling), these Healthy Frittata Egg Muffins are a great option.

A muffin-shaped frittata. This makes it very convenient for a quick breakfast. It’s not because slicing a slice of frittata is lazy (yes, we all have mornings when even that feels lazy, right?).

The rest is this shape. No one touches the frittata. These fritters muffins are the perfect hand food.

What do Egg Muffins taste like??

I had a hard time explaining the texture of these to some friends, like a quiche, soft like custard on the inside, and I want to tell you that. Drop cheese with plenty of cream.

But… ugh, that’s not healthy!!!

These egg muffins are a little foamy. Softer texture than a frittata or omelet.

I am fully aware that the term “spongy” is not really an appetizing description. But with my limited vocabulary, I can’t think of any other true way to describe them. There is and is healthy.

Stay away from the “spongy” texture!

Added bonus: Egg muffins last up to 4 days in the fridge.They also freeze great.

Egg muffins are best reheated in the microwave. I use it when I’m hopping around the kitchen and popping hot coffee in my thermos before popping out the door and hopping in my car.

Then imagine how complacent you feel even when you’re stuck in a terrible rush hour. You sip his hot coffee and nibble hot eggs his muffins while the others build up their frustration.

AND Your black tops will be crumb-free.

And knowing they’re healthy and high in protein makes you feel good, so you can keep yourself fuller longer than you’ve been crunching bagels on the run.

Equipment

Ingredients

  • 6 eggs (large or medium)

  • ½ tsp salt

  • ¼ tsp black pepper

  • 3/4 cup chopped spinach (baby or normal Spinach, or similar leafy greens)

  • 1/2 cup diced red capsicum / bell pepper

  • 8 cherry tomatoes , quartered (Note 1)

  • ½ cup shallots , finely sliced

  • 70 g / 2.5 oz feta , crumbled (about 1/2 cup)

  • Oil spray , for greasing muffin tin

Instructions

Preheat oven to 180C/350F.

Spray 6 standard non stick muffin holes with oil.

Whisk eggs, salt and pepper. Stir through vegetables and feta.

Divide mixture between holes.

Bake 20 minutes or until the top is light golden and the centre springs back when touched.

Served immediately. Or allow to cool, then store in an airtight container in the fridge for 3 - 4 days, or freezer for 3 months (defrost 2 minutes in the microwave or overnight in the fridge).

Notes

1. Tomato - If you use ordinary tomato, use 1 medium one and scrape out the watery seeds and just use the flesh. 2. Vegetables - Feel free to sub the vegetables with other vegetables of choice, as long as they are not watery (eg zucchini and eggplant would need to be cooked before stirring through as they leach a lot of water). Also, pickled / marinated vegetables and antipasto things (olives, gherkins etc) are terrific. These egg muffins are intended to be healthy but I won't judge if you want to load them up with goodness like cheese, salami / cooked bacon etc! 3. STORAGE: Keeps for 3 - 4 days in the fridge, or 3 months in the freezer. Microwave from frozen or defrost overnight in the fridge. Best served warm. 4. Nutrition per muffin. I find 2 muffins satisfying as a breakfast!
