yes, mine involves a tiny little bit of oil so a soffrito of onion, celery, and carrots may be slowly sautéed till sweet which creates a lovely flavor base for this soup. there is a cause that this is the manner that among the best classics in this international start – like beef Ragu!
Similar to the soffrito, I additionally sauté oregano and fennel. much like warm water makes the flavor of cocoa powder “bloom”, sautéing dried herbs and spices simply opens up their flavor. if you haven’t attempted it before, I think you’ll be pleasantly surprised!
