Super Quick Broccoli Pasta

If you dream of 12 minute dinner magic, you’re going to like this broccoli recipe as much as I do. It’s for all those days when:

You’re gazing broccoli with no longer much else inside the pantry, wondering how on the earth you’re going to transform that into a completely delicious meal;

it’s a mad residence and also you simply want to get dinner at the table, So quickly

You want to hide a number of broccoli in something that everybody will love. There’s 2 complete heads on this – but it honestly doesn’t look like it!

I love using lemon in this recipe, but it’s optional. It’s not a strong tangy lemon flavour, it’s in the background and helps create more sauce to toss through the pasta without adding tons of oil.

12 minute broccoli recipe!

This isn’t always a Jamie Oliver 15 Minute food kind recipe where you use every appliance, pot and pan to your kitchen and it’s a whirlwind of frantic chaos for 15-30 minutes then you definitely spend an excellent 40 mins cleaning up afterwards.

This is a very handy 12 minute recipe with a superb drift to it. here’s the way it is going down:

  1. Cook pasta: per the packet directions.
  2. Chop & cook broccoli & tomatoes: while the pasta is cooking, chop the broccoli & tomatoes then add it into the water when the pasta is 2 minutes from being done.
  3. Make sauce: Make the simple lemony pasta sauce
  4. Scoop out: 1 cup pasta cooking water This is how we make plenty of sauce without using tons of oil! upload 1/2 cup of this into the sauce and shake, reserve the relaxation of the water for later if you need it.
  5. Put everything in the pot: Drain the pasta and return to the same pot. Add the Sauce and cheese,
  6. Toss the pasta: sauce, water and cheese until it’s nice and juicy. Then Mix it well

I constantly struggle to capture how juicy pastas like this are, whilst the sauce is obvious as opposed to brilliant red and meaty like Bolognese.

I haven’t loaded this Broccoli Pasta with tons of cheese. I take advantage of it extra to create the sauce, in place of making this a really cheesy pasta. also try to keep the calorie count to a decent degree for a big bowl.

however, this Cheese-Loving Carb Monster will honestly now not choose in case you pick to be (manner) greater generous with the cheese.

Equipment

Ingredients

  • 350g / 12 oz dried short pasta

  • 2 broccoli heads

  • 1 cup tomatoes, chopped

  • 1 cup shredded cheese

  • 2 tsp lemon zest

  • 2 tbsp lemon juice

  • 5 tbsp extra virgin olive oil

  • 1/3 cup parmesan

  • 2 garlic cloves

  • 1 tsp mixed dried herbs

  • 1/2 tsp+ red pepper flakes

  • 1 tsp sugar

  • 3/4 tsp salt

  • 1/2 tsp pepper

Instructions

Cook pasta:

Boil a large pot of water with 2 tsp salt, add pasta.

Chop broccoli:

Chop broccoli into small florets.

Cook broccoli:

Add broccoli into water 1 – 2 minutes before pasta is cooked.

Sauce ingredients in a jar:

Place Sauce ingredients in a jar and cover.

Reserve pasta water:

SCOOP OUT 1 cup pasta cooking water simply earlier than draining. Then drain and put pasta back into the same pot and turn off the stove.

Add pasta water into Sauce:

Add 1/2 cup pasta water to Pasta Sauce jar, shake it well

Add Sauce & Cheese to pasta:

Pour Sauce and add cheese into pot with pasta

Stir then serve:

Stir vigorously, adding more pasta water if required. Add more salt and pepper if required. Serve immediately, garnished with parmesan.
