How to make rosemary salt

  1. Dry fresh rosemary sprigs in the microwave – just 2 minutes. (See below for oven)
  2. Grind into a powder (or crumble using fingers)
  3. Stir with salt

However, it can be challenging to determine the precise moment when the leaves are dry enough to grind without turning bitter, which can happen in less than a minute. To avoid this, start checking the leaves at 15 minutes, and then check every minute until they are ready. Alternatively, using the microwave is a faster and safer method.

  • 4 x 15 cm/6" sprigs of rosemary

  • 1/2 tsp table salt (Note 1)

Place a sheet of paper towel on a heatproof plate. Spread the fresh rosemary leaves on the paper towel, then cover with another single sheet of paper towel.

Microwave the rosemary in 4 x 30-second increments on high until the leaves are completely dry and can be crumbled into a powder between your fingers. The rosemary should retain its lovely vibrant green color. (Note: Alternatively, you can use the oven method mentioned earlier for drying the rosemary.)

Grinding:

Use a mortar and pestle or your fingers to grind the dried rosemary into a coarse powder. The goal is to have a mix of fine powder and small, coarse rosemary bits.

Mixing:

Measure out 3 teaspoons of the rosemary powder and combine it in a small bowl with the salt.

Sprinkle the rosemary salt on homemade fries, cooked proteins, and use it as a flavorful replacement for plain salt in cheese muffins, on focaccia, and in salad dressings.

Notes

When preparing rosemary salt, I personally prefer using table salt due to its finer grains, which adhere better to foods like fries. However, feel free to choose any type of salt that suits your preference. To dry the rosemary, an oven option is available: Spread the rosemary on a tray and place it in a preheated 100°C (fan & standard) / 210°F oven for 20 minutes. Be cautious not to let the rosemary turn golden, as it can quickly become bitter. If you prefer a safer and quicker method, using the microwave is a viable alternative.
