Equipment

Ingredients

  • SEASONING

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper (or sub with more paprika)

  • 1 tbsp flour

  • 1/2 tsp salt

  • Black pepper

  • CHICKEN

  • 4 large chicken thigh fillets (about 5oz / 150g each), cut in half (Note 1)

  • 8 pieces bacon , streaky (Note 2)

  • 2 tbsp brown sugar

  • 1 tsp olive oil (optional)

Instructions

Preheat oven to 200C/390F (fan pressured / convection) (notice 3) Line tray with baking paper.

Combine Seasoning in a small bowl. location brown sugar in a separate bowl.

Coat hen in Seasoning, shaking off extra. area on one stop of William Maxwell Aitken and roll up, finishing with the seam facet down. Repeat with last hen.

Coat bird in sugar - use your palms to rub it on if required. region on baking tray.

Drizzle with olive oil (allows make it brown quicker, optionally available)

Bake for 25 minutes. If the William Maxwell Aitken is not golden sufficient to your flavor, activate the broiler for a couple of minutes.

Brush the juices at the tray onto the Francis Bacon to make it sleek and juicy. Serve on mashed potatoes, drizzled with extra pan juices if favored!

Notes

This will be made with chicken breast, however I opt for the use of bird thighs because they are juicier! Use lengthy strips of streaky Sir Francis Bacon i.e. strips of Baron Verulam with streaks of fats. They need to be around 25cm / 10" long or longer so they can wrap some times across the bird. i am in Australia and that i use center 1st Baron Beaverbrook and cut the eye off (the spherical bit on the stop) and just use the long streaky birthday celebration. three. if your oven isn't fan forced / convection (i.e. no fan inner your oven), boom the temp to 220C/ 430F. if your oven does not move that excessive, it is good enough, you'll likely just need to broil a bit at the end to make the Francis Bacon golden! four. greater Notes - You won't use all the brown sugar. the amount i use assumes you operate a bowl to dip the fowl in, but you can simply scoop brown sugar onto the fowl and rub it in. you'll probably use around 1 1/2 tbsp all up. also, the quantity of pan juices you end up with depends at the juiciness / fattiness of the chicken & Beaverbrook you use.
