I’d happily meet my end buried beneath a mountain of these rolls. My first bite was pure ecstasy, with my eyes rolling back in sheer pleasure.

These sliders are crafted using soft white buns, piled high with Pork Carnitas, mixed with Enchilada Sauce, and then crowned with gooey, melted cheese and those heavenly caramelized onions. Let me tell you, those caramelized onions are the true stars of this slider, elevating it from merely great to out-of-this-world! The 12 minutes it takes to caramelize the onions is an investment well worth it.

(PS: To appease any purists reading this, traditional caramelized onions would take 40 to 50 minutes or more to achieve on very low heat. This is a quicker version that, in my opinion, is incredibly delicious for the time invested, so I opt for this method rather than the “proper” way!)

Since this recipe is part of a series, I used Homemade Enchilada Sauce, which I also used in other recipes within this collection. While store-bought is an option, I highly recommend trying the homemade version because it takes only 10 minutes and can be prepared simultaneously with caramelizing the onions.

Now, let me introduce you to this series! It’s a guide where I’ll demonstrate how to prepare five Mexican freezer-friendly meals for four people in just one hour, all for a budget of $50, using one batch of Pork Carnitas. Each meal serves four, so if you’re cooking for two, you’ll have enough for ten meals!   • FILLING

  • 1 1/2 cups shredded Pork Carnitas (Mexican Pulled Pork)

  • 1/2 cup Enchilada Sauce (preferably homemade

  • CARAMELIZED ONIONS

  • 1 1/2 tbsp butter

  • 2 brown onions , halved and finely sliced

  • 1 1/2 tbsp brown sugar

  • 1 tbsp balsamic vinegar

  • 1/2 tsp salt

  • Black pepper

  • TO SERVE

  • 1/2 cup grated mozzarella cheese (or any other good melting cheese)

  • 4 soft white bread rolls

  • Fresh parsley , finely chopped, for garnish (optional)

Instructions

Begin by melting butter in a frying pan over medium heat. Add the onions and sauté for approximately 7 minutes, stirring intermittently to ensure even cooking. Incorporate the remaining ingredients for caramelized onions and continue cooking for an additional 5 minutes, occasionally stirring until they turn sticky and acquire a caramelized consistency. Set the caramelized onion aside after cooking.

To brown the Pork Carnitas, wipe the pan clean and return it to the stove. Heat half a tablespoon of oil over high heat. Place the Pork Carnitas in the pan and gently press down with a spatula to facilitate crisping. Once the Pork Carnitas are heated through and the bottom side is beautifully golden brown and crispy (approximately 1 to 1.5 minutes), remove them from the pan without flipping them.

Combine the Pork Carnitas and Enchilada Sauce in a mixing bowl.

Preheat the grill (broiler) to high.

Split the rolls in half. Distribute the filling evenly among them, stacking it onto the bottom half of each roll. Top with cheese and place under the grill (broiler) for approximately 3 minutes until the cheese melts.

Remove from the grill, garnish with the caramelized onion, and, if desired, sprinkle with parsley.

Sandwich with the other half of the bread roll and serve immediately.

Notes

You can refrigerate caramelized onions for up to one week or freeze them for a period of three months. SUITABLE FOR FREEZING: Combine the Pork Carnitas and Enchilada sauce in one ziplock bag, and store the caramelized onions in a separate ziplock bag. Freeze until needed. Thaw completely before use and reheat in the microwave. The rationale behind cooking only one side of the Pork Carnitas is to maintain the juiciness of the pulled pork while still introducing a crispy texture from the browning on one side.
