So here’s my huge mystery tip: use MELTED garlic infused butter as opposed to softened butter:

  • 1 bread loaf , fairly flat (rather than a tall loaf, Note 1)

  • 125 g / 1 stick salted butter (or unsalted + 3/4 tsp salt)

  • 3 garlic cloves , very finely chopped (do not use crusher or jar, Note 2)

  • 1 tbsp finely chopped parsley , optional

Preheat BBQ to medium high.
Melt butter in a small saucepan over medium high heat.
Add garlic and salt, stir till garlic is light golden and salt is dissolved.
Immediately remove from warmness, set apart for for short while to allow garlic infuse into butter.
Cut up the bread in half lengthwise. Or use thick individual slices of bread.
Spoon just over half the butter onto the reduce face of the bread, averting the garlic bits. Brush a piece of butter on the other aspect.
Place bread reduce face down and prepare dinner for 3 - five mins or until you've got crusty edges, then flip.
Brush away any burnt garlic bits, then baste on the last garlic butter. Garlic bits are mainly for flavour infusion however sense unfastened to position them on too, extremely good texture!
Once underside is crusty (three min or so), get rid of, sprinkle with parsley, reduce and serve!

1. Bread shape - about 35cm / 14" long, 4 - 5cm / 1.5 - 2" thick. You want a bread that's not too tall / thick otherwise you'll feel like there's not enough butter to bread ratio. If you can only find tall traditional shaped bread loaves, just cut thick slices and make individual garlic bread slices instead! 2. Garlic - don't use a garlic crusher or garlic from a jar, the garlic is too fine and too wet so it will just splatter everywhere and burn too quickly in the butter.
